Ingredients

  • ¾ lb beef sirloin or chuck, thinly sliced
  • 2 tbsp fresh ginger, sliced into coins
  • 3 whole star anise
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 3 whole scallions, sliced
  • 3 cups beef broth

Instructions

    Bring beef broth to a boil in a large pot over medium-high heat.

    Add ginger coins and star anise. Simmer for 3 minutes until fragrant.

    Stir in fish sauce and soy sauce, then add beef slices one at a time.

    Return to a gentle simmer and cook 5–7 minutes until beef is tender and cooked through.

    Taste and adjust seasoning with salt, pepper, or more soy sauce as needed.
