Ingredients
- 8 cups beef broth
- 1 lb beef sirloin, sliced paper-thin
- 8 oz fresh rice noodles
- ½ medium onion, halved
- 2 tbsp ginger, sliced into coins
- 3 whole star anise
- 1 whole cinnamon stick
- 1 tbsp fish sauce
- 1 bowl fresh herbs and garnishes (basil, cilantro, lime, jalapeño)

Bring broth to a boil in a large pot over high heat. Add onion, ginger, star anise, and cinnamon.

Reduce heat and simmer for 10 minutes until fragrant. Stir in fish sauce and taste for salt.

Add rice noodles to the pot and simmer for 3–4 minutes until tender.

Divide noodles and broth into four bowls. Top each with a pile of raw beef slices.

Pour the hot broth over the beef. It will cook rare from the residual heat in about 30 seconds.

Serve with fresh herbs, lime, and jalapeño on the side. Eat immediately.
