Ingredients

  • 8 oz fresh mozzarella
  • 1 medium ripe tomato
  • 4 slices bread (ciabatta or sourdough)
  • 3 tbsp pesto
  • 1 tbsp balsamic glaze
  • 1 tbsp butter

    Slice mozzarella into thin rounds, roughly 1/4-inch thick.

    Slice tomato into 1/4-inch-thick rounds.

    Spread pesto on both sides of each bread slice.

    Layer mozzarella and tomato on two bread slices, then top with remaining bread.

    Heat butter in a skillet over medium until foaming, then place sandwiches inside.

    Cook until golden and crispy, about 2 minutes per side; mozzarella should be melty.
