Ingredients

  • 1 loaf crusty bread (ciabatta or sourdough)
  • 8 oz fresh mozzarella
  • 2 medium ripe tomato
  • 8 leaves fresh basil
  • 1 tbsp balsamic vinegar
  • 2 tbsp olive oil

Instructions

    Slice bread in half horizontally. Brush both cut sides with 1 tbsp olive oil each.

    Toast bread cut-side down in a skillet over medium-high heat until golden, ~2 minutes per side.

    Slice mozzarella into 1/4-inch rounds. Slice tomatoes into 1/4-inch rounds.

    Layer mozzarella and tomato on bottom bread half, alternating and slightly overlapping.

    Scatter basil leaves over tomato. Drizzle balsamic vinegar and season with salt and pepper.

    Top with other bread half, cut in half diagonally, and serve immediately.
