Penne with Tomato Sauce and Parsley

Ingredients
- 8 oz penne pasta
- 2 tbsp olive oil
- 2 cloves garlic
- 1 can (15 oz) canned crushed tomatoes
- 1 cup cherry tomatoes
- ¼ cup fresh parsley

Bring a large pot of salted water to a boil. Add the 8 oz penne and cook until al dente, about 11 minutes. Reserve 1/2 cup pasta water, then drain.

While pasta cooks, heat the 2 tbsp olive oil in a large skillet over medium. Add the 2 minced garlic cloves and cook until fragrant, about 1 minute.

Add the 1 can crushed tomatoes and 1 cup halved cherry tomatoes. Simmer until slightly thickened, about 8 minutes. Season with salt and pepper.

Add the drained penne to the sauce with a splash of reserved pasta water. Toss to coat, cooking for 1 minute until the sauce clings to the pasta.

Remove from heat and stir in the 1/4 cup chopped parsley. Serve immediately with extra parsley on top.
