Ingredients
- 12 oz penne pasta
- 6 slices bacon
- 2 cups cherry tomatoes
- 3 cloves garlic
- 4 stalks green onions
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper

Bring a large pot of salted water to a boil. Add the 12 oz penne and cook until al dente, about 11 minutes. Reserve 1 cup of pasta water, then drain.

While the pasta cooks, chop the 6 slices bacon into small pieces. Cook in a large skillet over medium heat until crispy, about 8 minutes. Transfer to a paper towel-lined plate, leaving 1 tbsp of drippings in the pan.

Add the 2 tbsp olive oil to the skillet. Add the 3 minced garlic cloves and cook until fragrant, about 1 minute. Add the 2 cups halved cherry tomatoes and cook until they soften and release their juices, about 5 minutes.

Add the cooked penne and crispy bacon to the skillet. Toss to combine, adding a splash of the reserved pasta water if needed to create a light sauce.

Season with the 1 tsp salt and 0.5 tsp black pepper. Stir in the 4 sliced green onions and serve hot.
