Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • ⅓ cup creamy peanut butter
  • 3 tbsp soy sauce
  • 1 tbsp fresh ginger, grated
  • ½ whole lime (juiced)
  • ½ tsp chili flakes or sriracha

Instructions

    Whisk together peanut butter, soy sauce, ginger, lime juice, and chili flakes until smooth.

    Cut chicken into 1.5-inch chunks and toss with half the peanut sauce to coat.

    Thread chicken onto skewers and arrange on a foil-lined sheet pan.

    Broil on high 6 inches from heat for 8 minutes, until edges look caramelized and chicken cooks through.
