Ingredients

  • 4 cups frozen peas
  • 3 cups vegetable broth
  • 1 medium onion
  • 2 tablespoons olive oil
  • ½ cup fresh mint leaves
  • ½ cup heavy cream

Instructions

    Heat the 2 tbsp olive oil in a large pot over medium heat. Add the 1 diced onion and cook until soft and translucent, about 5 minutes.

    Add the 4 cups frozen peas and 3 cups vegetable broth. Bring to a boil, then reduce heat and simmer until peas are tender, about 5 minutes.

    Remove from heat and stir in the 1/2 cup fresh mint leaves. Blend with an immersion blender until smooth and bright green.

    Season with salt and pepper to taste. Ladle into bowls and swirl in the 1/2 cup heavy cream, dividing evenly.
