Ingredients

  • 1 cup tapioca starch (or tapioca flour)
  • ½ cup whole milk
  • ¼ cup vegetable oil
  • 1 cup sharp cheddar or Gruyère, grated
  • 2 whole eggs
  • ¾ tsp salt

Instructions

    Preheat oven to 400°F. Line a baking sheet with parchment paper.

    Combine milk and oil in a bowl. Add tapioca starch and whisk until a thick, sticky batter forms.

    Stir in grated cheese and salt until evenly distributed.

    Beat in eggs one at a time, stirring until fully incorporated and smooth.

    Drop heaping tablespoons of batter onto the prepared sheet, spacing 2 inches apart.
