Ingredients
- 2 cups heavy cream
- ½ cup sugar
- 1 teaspoon vanilla extract
- 1 tablespoon powdered gelatin
- 3 tablespoons water
- 1.5 cups mixed berries
- ¼ cup nuts
- 4 leaves mint leaves

In a small bowl, sprinkle the 1 tbsp gelatin over the 3 tbsp water and let stand for 5 minutes until spongy.

In a saucepan, heat the 2 cups cream and 1/2 cup sugar over medium, stirring, until sugar dissolves and mixture is hot but not boiling, about 5 minutes.

Remove cream from heat, stir in the 1 tsp vanilla and the softened gelatin until completely dissolved, about 2 minutes.

Pour the mixture into 4 ramekins or glasses and refrigerate until set, at least 4 hours or overnight.

In a small saucepan, cook the 1.5 cups berries with 2 tbsp sugar over medium until berries burst and sauce thickens, about 8 minutes. Let cool.

To serve, spoon the berry sauce over each panna cotta, sprinkle with the 1/4 cup crushed nuts, and garnish with a mint leaf.
