Ingredients

  • 8 oz fresh egg noodles or ramen noodles
  • 3 tbsp soy sauce
  • 4 cloves garlic, minced
  • 1 medium carrot, sliced into thin matchsticks
  • 2 cups cabbage, shredded
  • 1 medium cucumber, sliced thin
  • 1 medium tomato, sliced thin

Instructions

    Boil noodles in salted water until al dente, then drain completely.

    Heat 2 tbsp oil in a large skillet over high heat until shimmering, about 1 minute.

    Add minced garlic and cook 30 seconds until fragrant, then add carrot and cabbage.

    Stir-fry until vegetables soften, about 3 minutes, then add cooked noodles and soy sauce.

    Toss constantly until noodles are heated through and edges start to crisp, 2–3 minutes.
