  • 1 cup pancake mix
  • ¾ cup water
  • 1 cup strawberries
  • ¼ cup peanut butter
  • ¼ cup maple syrup

    In a bowl, whisk 1 cup pancake mix with 0.75 cup water until just combined (lumps are fine). Let the batter rest for 2 minutes.

    Heat a lightly oiled skillet over medium heat. Pour 0.25 cup batter per pancake and cook until bubbles form on top, about 2 minutes. Flip and cook until golden, about 1 minute more.

    While pancakes cook, slice 1 cup strawberries. In a small saucepan, warm 0.25 cup peanut butter and 0.25 cup maple syrup over low heat, stirring until smooth, about 2 minutes.
