- 1 cup all-purpose flour
- 1 cup milk
- 1 large egg
- 2 teaspoons baking powder
- 2 medium orange
- 3 tablespoons sugar

In a medium bowl, whisk the 1 cup flour, 2 tsp baking powder, and 1 tbsp sugar. In a small bowl, beat the 1 egg with 1 cup milk, then stir into the dry ingredients until just combined (a few lumps are fine).

Heat a lightly oiled skillet over medium heat. Pour 1/4 cup batter per pancake and cook until bubbles form on top, about 2 minutes. Flip and cook until golden, about 1 minute more. Repeat with remaining batter.

While pancakes cook, peel and slice the 2 oranges into rounds, then cut the rounds into quarters. Place them in a small saucepan with the remaining 2 tbsp sugar and 2 tbsp water.

Simmer the orange mixture over medium heat, stirring occasionally, until the oranges soften and the liquid turns syrupy, about 5 minutes.
