Ingredients

  • 1 cup pancake mix
  • ¾ cup milk
  • 1 large egg
  • 1 medium banana
  • 1 medium peach
  • ½ cup blueberries

Instructions

    In a medium bowl, whisk the 1 cup pancake mix, 0.75 cup milk, and 1 egg until just combined; a few lumps are fine. Let the batter rest for 2 minutes.

    Heat a lightly oiled griddle or large skillet over medium heat. Pour 0.25 cup batter per pancake; cook until bubbles form on the surface, about 2 minutes, then flip and cook until golden brown, about 1 minute more.

    Slice the 1 banana and 1 peach into thin pieces. Stack the pancakes on a plate and top with the fruit and 0.5 cup blueberries.

    Drizzle with maple syrup and squeeze the lemon wedge over the top if you like. Serve warm.
