- 1 cup all-purpose flour
- 1 cup milk
- 1 large egg
- 2 teaspoons baking powder
- 2 cups mixed berries
- 1 sprig fresh rosemary

In a medium bowl, whisk 1 cup flour, 2 tsp baking powder, and a pinch of salt. In another bowl, beat 1 egg with 1 cup milk, then stir into the dry ingredients until just combined (lumps are fine).

Heat a lightly oiled skillet over medium heat. Pour small rounds of batter (about 2 tbsp each) and cook until bubbles form on top, about 2 minutes. Flip and cook until golden, about 1 minute more. Repeat with remaining batter.

In a small saucepan, combine 2 cups mixed berries with 2 tbsp water and 1 tbsp sugar (if desired). Simmer over medium heat until berries soften and release juices, about 5 minutes. Stir in 1 tsp chopped rosemary leaves.

Stack the pancakes on plates, spoon the warm berry compote over the top, and garnish with a fresh rosemary sprig and a dusting of powdered sugar if you like.
