- 1 cup milk
- 1 large egg
- 2 teaspoons baking powder
- 1 cup strawberries
- ½ cup blueberries

In a medium bowl, whisk together the 1 cup flour and 2 tsp baking powder. In a small bowl, beat the 1 egg with the 1 cup milk, then pour into the dry ingredients and stir until just combined (a few lumps are fine).

Heat a lightly oiled griddle or large skillet over medium heat. Pour about 1/4 cup of batter per pancake onto the hot surface. Cook until bubbles form on the surface and the edges look set, about 2 minutes.
