Ingredients

  • 1 cup all-purpose flour
  • 1 cup milk
  • 1 large egg
  • 2 teaspoons baking powder
  • 1 cup strawberries
  • ½ cup blueberries

Instructions

    In a medium bowl, whisk together the 1 cup flour and 2 tsp baking powder. In a small bowl, beat the 1 egg with the 1 cup milk, then pour into the dry ingredients and stir until just combined (a few lumps are fine).

    Heat a lightly oiled griddle or large skillet over medium heat. Pour about 1/4 cup of batter per pancake onto the hot surface. Cook until bubbles form on the surface and the edges look set, about 2 minutes.

    Flip the pancakes and cook until golden brown on the other side, about 1-2 minutes more. Repeat with the remaining batter, keeping cooked pancakes warm.

    Serve the pancakes topped with the 1 cup sliced strawberries and 1/2 cup blueberries. Drizzle generously with chocolate syrup (or maple syrup) just before serving.
