Ingredients

  • 1 lb biała kiełbasa (Polish white sausage)
  • 1 medium, sliced yellow onion
  • 1 large, cored and sliced into wedges apple (tart variety like Granny Smith)
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar or white vinegar
  • 2 tsp whole grain mustard
  • ½ tsp caraway seeds (optional but traditional)

Instructions

    Slice the kielbasa into 1/2-inch-thick coins.

    Heat oil in a large skillet over medium-high. Sear kielbasa 2 minutes per side until golden brown, then transfer to a plate.

    Add sliced onion to the same skillet. Cook, stirring often, until soft and caramelized, about 5 minutes.

    Stir in apple slices, caraway seeds, vinegar, and mustard. Cook 3 minutes until apples are just tender but not mushy.

    Return kielbasa to the skillet and toss gently with the apples and onions for 1 minute to warm through.
