  • 1 lb ground pork
  • ½ medium yellow onion, finely minced
  • ½ cup breadcrumbs (plain or panko)
  • 1 large egg
  • ¼ cup whole-grain mustard
  • ¼ cup sour cream

Instructions

  1. 1

Mix pork, minced onion, breadcrumbs, egg, 1 tsp salt, and 0.5 tsp black pepper in a bowl until just combined.

  2. 2

Form into 8 patties about 2.5 inches wide and 0.75 inches thick, using wet hands to prevent sticking.

  3. 3

Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 60 seconds.

  4. 4

Pan-fry patties 3–4 minutes per side without moving until deep golden brown and cooked through.

  5. 5

Whisk mustard and sour cream together with 1 tbsp warm water until smooth and pourable.

  6. 6

Serve patties hot with mustard-sour cream sauce on the side or drizzled on top.
