Ingredients

  • 4 pieces pork sausages (8 oz, preferably Cumberland or good-quality pork)
  • 1 large yellow onion, sliced into thin rings
  • ½ tsp black pepper (coarsely ground)
  • ½ tsp fresh thyme leaves (or dried)
  • ½ cup beef or chicken stock
  • 1 tbsp Worcestershire sauce
  • 1 tsp English mustard (or whole-grain mustard)

Instructions

    Heat a large skillet over medium-high. Add sausages and cook 12 minutes, turning every 3 minutes, until golden brown all over.

    Transfer sausages to a plate. Add onion to the same skillet with a pinch of salt; sauté 4 minutes until soft and just starting to color.

    Pour in stock and Worcestershire sauce, scraping up any browned bits. Stir in mustard and thyme.

    Return sausages to the skillet. Simmer 2 minutes until gravy thickens slightly. Season with coarse black pepper.
