- 4 pieces pork sausages (8 oz, preferably Cumberland or good-quality pork)
- 1 large yellow onion, sliced into thin rings
- ½ tsp black pepper (coarsely ground)
- ½ tsp fresh thyme leaves (or dried)
- ½ cup beef or chicken stock
- 1 tbsp Worcestershire sauce
- 1 tsp English mustard (or whole-grain mustard)
