- 12 whole fresh oysters
- 2 cups ice
- 1 whole lemon
- 2 tablespoons fresh parsley

Scrub the 12 oysters under cold running water to remove any grit or sand, about 2 minutes.

Hold each oyster with a towel, insert an oyster knife near the hinge, and twist to pop the shell open. Slide the knife along the top shell to detach it, being careful not to spill the juices.

Run the knife under the oyster meat to release it from the bottom shell, then place the oyster on a bed of 2 cups ice on a serving platter.

Repeat with remaining oysters, arranging them on the ice as you go.
