Ingredients

  • 1 lb cooked oxtail (store-bought or leftover)
  • 1 can (15 oz) canned butter beans, drained
  • 1 can (14.5 oz) diced tomatoes (canned)
  • 1 cup beef broth
  • 1 bag (10-12 oz) frozen french fries
  • 2 cups coleslaw mix (pre-shredded cabbage)

Instructions

    Start the fries in a 400°F oven or air fryer while you build the stew.

    Heat olive oil in a large skillet over medium-high. Add oxtail and sear 2 minutes per side until edges brown slightly.

    Pour in broth and diced tomatoes with juice. Stir in butter beans, salt, and pepper. Simmer 8 minutes until sauce thickens slightly.

    Toss coleslaw mix with a pinch of salt and a splash of vinegar in a bowl while the stew finishes.
