Ingredients

  • 1.25 lbs Italian sausage links
  • 2 medium bell peppers (red or yellow), chopped
  • 1 medium zucchini, chopped into 1-inch pieces
  • 1 medium red onion, chopped into chunks
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1.5 tsp dried Italian seasoning
  • 1 pinch salt and black pepper to taste

Instructions

    Preheat oven to 425°F. Cut sausage links into 1.5-inch rounds.

    Toss peppers, zucchini, onion, garlic, olive oil, Italian seasoning, salt, and pepper in a large bowl until coated.

    Spread sausage pieces and vegetables in an even layer on a sheet pan.

    Roast for 20–25 minutes, stirring halfway through, until sausage is browned and vegetables are tender and caramelized.
