Ingredients
- 6 pieces (about 2 lbs) chicken thighs, bone-in and skin-on
- 1.5 lbs potatoes, cut into 1-inch chunks
- 3 tbsp fresh herbs (rosemary and thyme), roughly chopped
- 1 whole lemon (zested + juiced)
