Ingredients
- 4 large eggs
- 2 links cooked sausages
- 2 tbsp milk
- 1 tbsp butter
- 2 tbsp fresh parsley
- 1 pinch salt and pepper

Slice the 2 sausages into 1/4 inch rounds. In a bowl, whisk the 4 eggs with the 2 tbsp milk, a pinch of salt and pepper, and 1 tbsp chopped parsley until just combined.

Melt the 1 tbsp butter in a nonstick skillet over medium heat. Add the sausage slices and cook, stirring, until browned and heated through, about 3 minutes.

Pour the egg mixture over the sausages. Let it set for 1 minute, then gently push the cooked edges toward the center with a spatula, tilting the pan to let uncooked egg flow underneath.

When the omelette is almost set but still slightly runny on top, about 2 minutes, fold it in half with the spatula. Slide onto a plate and sprinkle with the remaining 1 tbsp parsley before serving.
