Ingredients

  • 1 lb okra
  • 1 medium yellow onion
  • 2 medium tomato
  • 1 green chili pepper
  • 3 tbsp vegetable oil
  • 1 tsp ground turmeric
  • 1 tsp salt
  • 1 tbsp sesame seeds

Instructions

    Wash and dry the 1 lb okra thoroughly, then trim the stems and slice into 1/2 inch rounds. Set aside.

    Heat 3 tbsp vegetable oil in a large skillet over medium heat. Add 1 sliced onion and 1 chopped green chili, cook until soft and golden, about 6 minutes.

    Add the okra and 1 tsp salt. Cook, stirring occasionally, until okra is tender and lightly browned, about 10 minutes. Do not overcrowd the pan.

    Add 2 chopped tomatoes and 1 tsp ground turmeric. Stir and cook until tomatoes break down into a thick sauce, about 5 minutes.

    Sprinkle 1 tbsp sesame seeds over the curry and stir to combine. Cook for 1 more minute until fragrant.
