Ingredients

  • 1 pound octopus
  • 4 cups lettuce
  • 1 large orange
  • ½ medium red onion
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. 1

Rinse the 1 pound octopus and place in a large pot. Cover with water, add 1 teaspoon salt, and bring to a boil. Reduce heat and simmer until tender, about 40 minutes.

  2. 2

Drain the octopus and let cool slightly. Cut the tentacles into bite-sized pieces and set aside.

  3. 3

Wash and dry the 4 cups lettuce, then tear into bite-sized pieces and place in a large salad bowl.

  4. 4

Peel the 1 large orange and cut into segments, removing any seeds. Thinly slice the 0.5 medium red onion into rings.

  5. 5

Add the octopus pieces, orange segments, and red onion rings to the bowl with the lettuce.

  6. 6

Drizzle with 3 tablespoons olive oil, season with 0.5 teaspoon black pepper, and toss gently to combine. Serve immediately.

  7. 7

Optional: add a squeeze of lemon juice or a sprinkle of paprika for extra flavor if you have them.
