Ingredients
- 1 pound octopus
- 4 cups lettuce
- 1 large orange
- ½ medium red onion
- 3 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper

Rinse the 1 pound octopus and place in a large pot. Cover with water, add 1 teaspoon salt, and bring to a boil. Reduce heat and simmer until tender, about 40 minutes.

Wash and dry the 4 cups lettuce, then tear into bite-sized pieces and place in a large salad bowl.
