Ingredients

  • 1.5 cups mixed nuts (walnuts, cashews, hazelnuts, pine nuts)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ cup butter, softened
  • ¾ cup sugar
  • 3 large eggs
  • ¼ cup milk

Instructions

    Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.

    In a food processor, pulse the 1.5 cups mixed nuts until finely ground but not pasty. Transfer to a bowl and stir in 1 cup flour and 1 teaspoon baking powder.

    In a large bowl, beat 0.5 cup softened butter and 0.75 cup sugar until light and fluffy, about 3 minutes. Add 3 eggs one at a time, beating well after each.

    Fold the nut-flour mixture into the butter mixture alternately with 0.25 cup milk, starting and ending with the dry ingredients. Mix until just combined.

    Pour the batter into the prepared pan and smooth the top. Bake until a toothpick inserted in the center comes out clean, about 35-40 minutes.

    Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before slicing.
