  • ¾ cup sugar
  • ½ cup unsweetened cocoa powder
  • 1.5 teaspoon baking powder
  • ½ cup walnuts
  • ½ cup kumquats

    Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.

    In a large bowl, whisk together 1 cup flour, 0.75 cup sugar, 0.5 cup cocoa, and 1.5 tsp baking powder. Add 0.5 cup chopped walnuts and 0.5 cup sliced kumquats, toss to coat.

    Add 1 cup water and 0.5 cup vegetable oil to the dry ingredients. Stir until just combined; batter will be lumpy.
