Ingredients

  • 1 lb lamb, cut into 1-inch cubes
  • 3 tbsp ground peanuts (or peanut butter)
  • 1.5 tsp cayenne pepper
  • 1 tsp smoked paprika
  • 2 cloves garlic, minced
  • 1 whole lime, halved

Instructions

  1. 1

Mix ground peanuts, cayenne, paprika, garlic, 2 tbsp oil, salt, and pepper in a bowl until it forms a paste.

  2. 2

Thread lamb cubes onto skewers and coat all sides evenly with the spice paste, pressing it on.

  3. 3

Heat a cast-iron skillet or grill pan over medium-high until it smokes, about 2 minutes.

  4. 4

Sear skewers 2 minutes per side without moving, until the spice crust chars and the lamb is medium-rare inside.

  5. 5

Squeeze lime over the skewers and serve hot on a plate or with onion slices and tomatoes if desired.

Tools you’ll need

  • metal skewers (4-6, soaked 10 min if wooden)
  • small mixing bowl
  • cast-iron skillet or grill pan, 12-inch minimum
