Ingredients

  • 1.5 lb lamb shoulder or leg, cut into 1-inch cubes
  • 2 tbsp paprika
  • 1 tsp cayenne pepper
  • 1 tbsp onion powder
  • 1 tbsp ginger, minced
  • 1 whole lemon (zested + juiced)
  • ¼ cup fresh herbs (parsley or cilantro, chopped)

    Pat lamb dry with paper towels. Season with salt and black pepper generously.

    Mix paprika, cayenne, onion powder, ginger, and lemon zest in a shallow bowl.

    Toss lamb cubes in the spice mixture until fully coated.

    Heat oil in a large skillet over high heat until it shimmers, about 90 seconds.

    Working in batches, sear lamb 2–3 minutes per side without stirring until edges char and inside is cooked through.

    Transfer to a serving plate. Squeeze lemon juice over and scatter fresh herbs on top. Serve hot.
