Ingredients
- 1.5 lb lamb shoulder or leg, cut into 1-inch cubes
- 2 tbsp paprika
- 1 tsp cayenne pepper
- 1 tbsp onion powder
- 1 tbsp ginger, minced
- 1 whole lemon (zested + juiced)
- ¼ cup fresh herbs (parsley or cilantro, chopped)

Pat lamb dry with paper towels. Season with salt and black pepper generously.

Heat oil in a large skillet over high heat until it shimmers, about 90 seconds.
