Ingredients

  • 1 lb lamb sirloin or leg, cut into 1-inch cubes
  • ⅓ cup roasted unsalted peanuts, finely ground or pounded
  • 2 tsp cayenne pepper
  • 1 tsp paprika
  • 1 tbsp ginger, minced
  • ½ tsp onion powder
  • 1 whole lime or lemon, halved

Instructions

    Pat lamb cubes dry. Combine ground peanuts, cayenne, paprika, ginger, onion powder, and salt in a shallow bowl.

    Squeeze lime juice over lamb, then toss cubes in the peanut spice mix until fully coated.

    Thread lamb onto metal skewers, leaving a tiny gap between cubes so heat reaches all sides.

    Heat a cast-iron skillet or grill pan over high heat until a drop of water sizzles immediately.
