Ingredients

  • 1 lb lamb shoulder or leg, cut into 1-inch cubes
  • ½ cup roasted unsalted peanuts, finely ground or crushed
  • 2 tbsp chili powder or cayenne pepper
  • 1 tbsp fresh ginger, minced
  • 3 clove garlic cloves, minced
  • 1 whole lime (juiced)
  • 3 tbsp olive oil

Instructions

    Mix peanuts, chili powder, ginger, garlic, lime juice, oil, salt, and pepper in a bowl until paste-like.

    Toss lamb cubes with the spice paste until fully coated; let sit 5 minutes.

    Thread lamb onto metal skewers, leaving small gaps between pieces for even cooking.

    Heat a cast iron skillet over medium-high until it shimmers, about 90 seconds.

    Lay skewers in the pan and sear 3–4 minutes per side until edges blacken and lamb is medium-rare.
