Ingredients

  • 1 lb lamb, boneless leg or shoulder
  • ½ cup roasted unsalted peanuts, crushed coarse
  • 1.5 tsp cayenne pepper
  • 1 tsp paprika
  • ½ tsp onion powder
  • 1 whole lime (juiced)
  • 3 tbsp neutral oil for cooking

Instructions

  1. 1

Cut lamb into 1-inch cubes, pat dry with paper towels, and season with salt and black pepper.

  2. 2

Mix crushed peanuts, cayenne, paprika, and onion powder in a shallow bowl.

  3. 3

Coat each lamb cube in the peanut spice mixture, pressing gently so it adheres.

  4. 4

Heat oil in a large skillet over medium-high until it shimmers and just begins to smoke, ~2 minutes.

  5. 5

Working in batches, sear lamb without stirring for 2 minutes per side until deep golden-brown and crispy.

  6. 6

Transfer to a plate, squeeze lime juice over the top, and serve hot with sliced onion and lime wedges.
