Ingredients

  • 1 lb lamb shoulder, cut into 1-inch cubes
  • 2 tbsp chili powder
  • 1 tsp ground ginger
  • ½ tsp cayenne pepper
  • 1 tsp paprika
  • 1 medium red onion, sliced thin
  • 1 whole lime

Instructions

    Combine chili powder, ginger, cayenne, paprika, salt, and pepper in a bowl. Toss lamb cubes with the spice mixture until fully coated.

    Heat oil in a large skillet over high heat until it shimmers, about 1 minute. Working in two batches, sear lamb 2-3 minutes per side until edges char.

    Transfer cooked lamb to a plate. Return all lamb to the skillet and toss for 30 seconds to finish cooking through.
