Ingredients

  • 3 cups cooked white rice (day-old, chilled preferred)
  • ½ lb medium shrimp, peeled
  • 2 tbsp sambal oelek or chili paste
  • 2 whole eggs
  • 1.5 tbsp soy sauce
  • ¼ cup scallions, chopped

Instructions

    Heat 1 tbsp oil in a large skillet over medium-high until shimmering.

    Add shrimp and cook, stirring often, until pink and cooked through, ~3 minutes.

    Stir in sambal and soy sauce, then add rice and break up clumps as you toss.

    Push rice to the sides, crack eggs into the center, and cover skillet 2 minutes.
