Ingredients

  • 3 cups cooked rice (day-old or chilled), broken into grains
  • 8 oz boneless chicken thighs or breast, cut into bite-sized pieces
  • 2 whole eggs
  • 3 tbsp soy sauce
  • 2 tbsp sambal oelek or chili paste
  • ½ whole cucumber, thinly sliced
  • 2 whole scallions, sliced (white and green parts separated)

Instructions

    Heat 2 tbsp oil in a large skillet over medium-high. Add chicken pieces and cook, stirring, until golden and cooked through, about 6 minutes.

    Push chicken to the side. Crack both eggs into the skillet and fry sunny-side up until whites set but yolks jiggle, about 3 minutes.

    Add rice to the empty space, breaking apart clumps with a spoon. Stir everything together for 2 minutes until rice is heated through.

    Pour soy sauce and sambal over the rice. Toss until evenly coated, about 1 minute. Add white scallion parts and stir.

    Transfer to a plate. Top with cucumber slices and green scallion parts. Serve immediately while everything is hot.
