Ingredients

  • 8 ounces tortilla chips
  • 1 pound ground beef
  • 2 cups cheddar cheese, shredded
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 medium jalapeño, sliced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon vegetable oil

Instructions

    Preheat oven to 375°F and line a baking sheet with foil.

    Heat oil in a skillet over medium-high heat and cook beef until browned, about 5 minutes.

    Season beef with salt and pepper, then stir in black beans and cook for 2 minutes.

    Spread tortilla chips evenly on the baking sheet and top with beef-bean mixture.

    Sprinkle shredded cheddar cheese over the top and bake for 5-7 minutes until melted.
