Ingredients
- 500 g mutton
- 2 cups basmati rice
- 1 cup mint leaves
- 3 tbsp ghee
- 4 whole cardamom pods
- 1 inch cinnamon stick
- 4 whole cloves
- 1 tsp black peppercorns
- 1 leaf bay leaf
- 1.5 tsp salt

Rinse rice and soak in water for 30 minutes, then drain.

Heat ghee in a heavy pot and sauté whole spices until fragrant.

Add mutton pieces and salt, brown on all sides for 5 minutes.

Add 2 cups water, cover, and simmer until mutton is tender, about 40 minutes.

Layer soaked rice over the mutton, add 2 cups water, and cover tightly.

Cook on low heat for 20 minutes until rice is fluffy and liquid absorbed.
