Ingredients

  • 2 pounds mussels
  • 1 pound french fries
  • 3 tablespoons butter
  • 3 cloves garlic
  • ½ cup white wine
  • ¼ cup fresh parsley
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

    Scrub the 2 pounds mussels under cold water, pulling off any beards. Discard any that are open or cracked.

    Cook the 1 pound french fries according to package directions until golden and crispy, about 15 minutes. Keep warm.

    In a large pot, melt the 3 tablespoons butter over medium heat. Add the 3 minced garlic cloves and cook until fragrant, about 1 minute.

    Add the 0.5 cup white wine and bring to a simmer. Add the mussels, cover, and cook until they open, about 5-7 minutes, shaking the pot once.

    Stir in the 0.25 cup chopped parsley, 1 teaspoon salt, and 0.5 teaspoon pepper. Discard any unopened mussels.
