Ingredients

  • 1 lb mixed seafood (calamari rings, shrimp, white fish fillets)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups vegetable oil
  • 1 medium red onion
  • ¼ cup white vinegar

    Thinly slice the 1 red onion and toss with the 0.25 cup white vinegar and a pinch of salt in a small bowl. Set aside to quick-pickle while you cook.

    Cut the fish into 2-inch pieces. Pat all seafood dry with paper towels. Set up a dredging station: 1 cup flour in one bowl, 2 beaten eggs in another.

    Heat 2 cups vegetable oil in a deep skillet over medium-high until a pinch of flour sizzles immediately, about 5 minutes. Meanwhile, dip seafood pieces in egg, then coat in flour, shaking off excess.

    Working in batches, fry the seafood for 3-4 minutes until golden brown and crispy, turning once. Drain on paper towels and season with salt immediately.
