Ingredients

  • 1 cup cold water
  • 1 teaspoon salt
  • 2 cups vegetable oil
  • ½ pound white fish fillets
  • ½ pound squid
  • 1 medium zucchini
  • 1 whole lemon

    Cut the 0.5 lb fish into 2-inch chunks and the 0.5 lb squid into rings; slice the 1 zucchini into 3-inch sticks. Pat everything dry with paper towels.

    In a bowl, whisk 1 cup flour, 1 cup cold water, and 1 tsp salt until smooth (batter should be lumpy, not overmixed).

    Heat 2 cups vegetable oil in a deep skillet over medium-high until a drop of batter sizzles immediately, about 5 minutes.

    Dip fish, squid, and zucchini into the batter, letting excess drip off, then carefully place in hot oil in batches—do not crowd the pan.
