Ingredients
- 1.5 lb chicken thighs
- 2 tbsp miso paste
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 medium onion
- 3 stalks green onions
- 1 tbsp vegetable oil

Cut the 1.5 lb chicken thighs into 1-inch chunks. Slice the 1 medium onion into 1-inch pieces. Thread chicken and onion alternately onto skewers.

In a small bowl, whisk together the 2 tbsp miso paste, 2 tbsp soy sauce, and 2 tbsp honey until smooth.

Brush the skewers with half of the miso glaze. Reserve the rest for later.

Heat the 1 tbsp vegetable oil in a large skillet over medium-high heat. Place the skewers in the pan, working in batches if needed to avoid crowding.

Cook the skewers for 4-5 minutes per side, until the chicken is golden and cooked through (no pink inside).

Brush the skewers with the remaining glaze and cook for 1 more minute, until the glaze is sticky and caramelized.
