- 2 large eggs
- 1 cup breadcrumbs
- 2 whole crusty rolls
- 4 whole lettuce leaves
- 1 medium tomato

Pound the 2 beef cutlets to 1/4 inch thickness. Season both sides with salt and pepper. Set up a dredging station: beat the 2 eggs in a shallow bowl, and place the 1 cup breadcrumbs on a plate.

Dip each cutlet into the beaten egg, letting excess drip off, then press into the breadcrumbs to coat evenly. Heat 1/4 cup oil in a large skillet over medium-high heat until shimmering, about 2 minutes.
