Ingredients

  • 1.5 cups whole milk
  • 2 large egg yolks
  • 3 tbsp granulated sugar
  • ½ tsp vanilla extract
  • 2 large egg whites
  • 1 cup fresh berries

Instructions

    Heat milk in a saucepan over medium-low until small bubbles form around the edge, ~3 minutes.

    Whisk egg yolks with 2 tbsp sugar until pale, then slowly pour in warm milk while whisking constantly.

    Return mixture to saucepan, stirring constantly, until it coats the back of a spoon, ~4 minutes.

    Strain custard through a fine sieve into a bowl, stir in vanilla, then chill while you make meringue.

    Bring a shallow pan of water to a gentle simmer. Whip egg whites until foamy, then add 1 tbsp sugar and beat until stiff peaks form.
