- 1 lb ground beef
- 1 large egg
- ½ cup breadcrumbs
- 1.5 lb potatoes
- 1 cup cherry tomatoes
- 2 tbsp yellow mustard

Preheat oven to 400°F. In a bowl, mix 1 lb ground beef, 1 egg, 1/2 cup breadcrumbs, and 1 tbsp mustard. Shape into a loaf and place on a baking sheet.

Bake the meatloaf for 20-25 minutes, until browned and cooked through (internal temp 160°F). Meanwhile, peel and chop 1.5 lb potatoes into chunks.

Boil potatoes in salted water for 15 minutes, until fork-tender. Drain and mash with 2 tbsp butter and 1/4 cup milk (or water) until smooth.

Toss 1 cup cherry tomatoes with 1 tsp oil and a pinch of salt. Roast on a small pan for 10 minutes, until blistered and soft.
