Ingredients
- 1.5 cups arborio rice
- 2 cups meat sauce
- 4 cups beef broth
- 2 tbsp butter
- ½ cup parmesan cheese
- 1 medium onion
- 1 tbsp olive oil
Instructions
- 1
Heat 1 tbsp olive oil in a large skillet over medium heat. Add 1 diced onion and cook until soft and translucent, about 5 minutes.
- 2
Add 1.5 cups arborio rice and toast, stirring constantly, until the edges are translucent, about 2 minutes.
- 3
Stir in 2 cups meat sauce and 1 cup beef broth. Cook, stirring frequently, until the liquid is mostly absorbed, about 5 minutes.
- 4
Continue adding the remaining 3 cups beef broth, one ladle at a time, stirring often. Wait until each addition is absorbed before adding more, about 20 minutes total.
- 5
When the rice is creamy and tender but still slightly al dente, remove from heat. Stir in 2 tbsp butter and 0.5 cup parmesan cheese until melted and creamy.
- 6
Let the risotto rest for 2 minutes, then serve hot with extra parmesan on top if desired.
- 7
For extra flavor, stir in a pinch of nutmeg or black pepper before serving.
