Ingredients

  • 10 oz pork tenderloin or thin-sliced pork
  • 7 oz soba noodles (buckwheat)
  • 3 tbsp mirin (sweet rice wine)
  • 3 tbsp soy sauce
  • 1 cup dashi stock or chicken broth
  • ¼ cup fried shallots (crispy onions)
  • 2 tbsp scallions (chopped)
  • ½ sheet nori seaweed sheet (crumbled)

Instructions

    Boil soba noodles in salted water until al dente, about 4 minutes. Drain and rinse under cold water until chilled.

    Heat oil in a skillet over medium-high heat. Sear pork 2 minutes per side until cooked through and edges brown.

    Slice pork into bite-size strips while still warm. Set aside.

    Whisk together mirin, soy sauce, and dashi in a bowl. Chill the broth while noodles cool.

    Divide chilled noodles between two bowls. Top with sliced pork, fried shallots, scallions, and nori.

    Pour chilled dipping broth into separate small cups. Dip noodles and pork, then eat.
