Ingredients
- 10 oz pork tenderloin or thin-sliced pork
- 7 oz soba noodles (buckwheat)
- 3 tbsp mirin (sweet rice wine)
- 3 tbsp soy sauce
- 1 cup dashi stock or chicken broth
- ¼ cup fried shallots (crispy onions)
- 2 tbsp scallions (chopped)
- ½ sheet nori seaweed sheet (crumbled)

Boil soba noodles in salted water until al dente, about 4 minutes. Drain and rinse under cold water until chilled.

Heat oil in a skillet over medium-high heat. Sear pork 2 minutes per side until cooked through and edges brown.

Slice pork into bite-size strips while still warm. Set aside.

Whisk together mirin, soy sauce, and dashi in a bowl. Chill the broth while noodles cool.

Divide chilled noodles between two bowls. Top with sliced pork, fried shallots, scallions, and nori.
