Ingredients

  • 4 medium plantains, green or semi-ripe
  • 1 medium yellow onion
  • 14 oz tomatoes, fresh or canned
  • 1 cup vegetable broth
  • 3 cloves garlic cloves
  • 2 tbsp coconut oil or olive oil
  • ¼ cup fresh cilantro or parsley, chopped

Instructions

  1. 1

Peel plantains and cut into 2-inch chunks. Boil in salted water until tender, about 10 minutes.

  2. 2

While plantains cook, heat oil in a skillet over medium. Dice the onion and sauté until translucent, 2 minutes.

  3. 3

Mince garlic and add to the onion, stirring for 30 seconds until fragrant.

  4. 4

Pour in tomatoes and broth. Simmer 5 minutes, stirring occasionally, until stew thickens slightly.

  5. 5

Drain plantains and return to the pot they cooked in. Mash roughly with a fork until chunky-smooth.

  6. 6

Divide matoke between bowls, top with tomato stew, and scatter cilantro over the top.
