Ingredients
- 4 medium plantains, green or semi-ripe
- 1 medium yellow onion
- 14 oz tomatoes, fresh or canned
- 1 cup vegetable broth
- 3 cloves garlic cloves
- 2 tbsp coconut oil or olive oil
- ¼ cup fresh cilantro or parsley, chopped

Peel plantains and cut into 2-inch chunks. Boil in salted water until tender, about 10 minutes.

While plantains cook, heat oil in a skillet over medium. Dice the onion and sauté until translucent, 2 minutes.

Mince garlic and add to the onion, stirring for 30 seconds until fragrant.

Pour in tomatoes and broth. Simmer 5 minutes, stirring occasionally, until stew thickens slightly.
