Mango Pudding

Ingredients
- 2 medium ripe mango
- 1 cup heavy cream
- 1 cup milk
- ¼ cup sugar
- 1 tbsp gelatin powder
- 3 tbsp water
- 4 leaves mint leaves

Peel and dice the 2 mangoes. Reserve 1/2 cup of diced mango for topping, and blend the rest until smooth.

In a small bowl, sprinkle 1 tbsp gelatin over 3 tbsp water. Let sit for 5 minutes to bloom.

In a saucepan, heat 1 cup milk, 1 cup cream, and 1/4 cup sugar over medium, stirring until sugar dissolves, about 3 minutes. Do not boil.

Remove from heat, add the bloomed gelatin, and stir until fully dissolved, about 1 minute.

Stir in the mango puree until well combined. Pour into 4 serving glasses or bowls.

Refrigerate for at least 4 hours, until set and firm to the touch.

Top with the reserved mango cubes and garnish with mint leaves before serving.
