Mango Crème Brûlée

Ingredients
- 1 cup heavy cream
- 3 large egg yolks
- 3 tbsp sugar
- 1 cup, diced mango
- 1 tsp vanilla extract
- 2 tbsp crushed nuts

In a small bowl, whisk the 3 egg yolks with 2 tbsp sugar until pale and thick, about 2 minutes.

In a saucepan, heat the 1 cup heavy cream and 1 tsp vanilla over medium until steaming, about 3 minutes. Do not boil.

Slowly pour the hot cream into the yolks, whisking constantly. Return to the pan and cook over low, stirring, until the custard coats the back of a spoon, about 5 minutes.

Divide the 1 cup diced mango between 2 ramekins. Pour the custard over the mango and chill until set, at least 2 hours.

Sprinkle the remaining 1 tbsp sugar over each custard. Use a kitchen torch to caramelize until golden and crisp. Top with the 2 tbsp crushed nuts.
